My Go-To Gadgets
How many of you have a kitchen full of gadgets and only use a couple of them? ME! I’m totally guilty of that! I blame my mother, she is a the kitchen gadget queen and I think it kind of rubbed off on me. Over the last couple of years I have hated cooking, I actually used to really enjoy it. Now that there are six mouths to feed in this house and I usually find myself cleaning the kitchen just to make a new mess, I would opt to not cook at all. But let’s face it, six mouths to feed gets expensive for take out!
The single most greatest gadget I own is hands down my InstantPot. I absolutely blame Brenda Ster for this. Around Christmas 2016 someone mentioned this contraption and the Socialite Suite was all a buzz about it. I check it out, decide we MUST have this, and immediately hit up Amazon. It’s on my doorstep in 2 days. Unlike several people I know, I wasn’t afraid to use it and I never once thought about it blowing up in my kitchen. Although I do now thanks to some friends who are terrified of theirs (insert crying laughing emoji).
What followed the unpacking of this wondrous device? The deep, dark Pinterest rabbit hole! InstantPot meatloaf, crack chicken, hard-cooked egg, chicken, ribs, soup, yogurt….oh my! Everything you cook on your stove, your oven even your slow cooker, you can make in literally, an instant! We went on a ski trip over winter break and took it with us, that’s how easy it is to transport and use.
Ever air fry anything? Yea, me neither, til tonight. Come on, this can’t be real, can it? That is what I thought when I started seeing my friends talk about their AirFryer on Facebook. Hold on, let me get this straight. You rapidly cook food in no oil and it comes out crispy? Nope. Not buying it. But wait, it’s ALL over the internet just the like the InstantPot was….are they on to something, again? Ok, let me check them out. One year later, I finally bought one with a gift card I received for Macy’s.
Tonight, we made fresh-cut fries and fresh-cut chicken tenders and OH MYLANTA, I can’t believe my eyes! I should have totally took a photo but there is nothing left, that is how delicious it was. Now, it is tedious work. You can’t put huge amounts in at one time, so you have to cook in shifts. My husband did it while I paid bills online. I’m not complaining!
Ever burn up a blender? How about a Magic Bullet? It stinks, literally! I don’t know why but I personally tend to burn blenders up over time. Maybe I load it too full. Maybe I don’t use them properly, I don’t know. A couple of years ago I was wanting a Ninja, but I’m cheap. I was almost ready to pull the trigger on the big mack-daddy Ninja until I found this gem! The Ninja Master Prep Pro System is my jam! I ended up getting rid of not only my old blender but my food processor too! This Ninja was all I needed. If you are in the market for a very reasonably priced processor/blender, check it out.
My Go-To Recipes
Like I previously said, I’m not really into cooking anymore, so I tend to steer towards simple things. Here are a couple of simple, quick and easy InstantPot recipes that don’t take a lot of time or planning. Oh and I forgot, I don’t measure much and I tend to tweak recipes I find as needed, so these are super basic!
InstantPot Chicken Tacos
1 bag frozen chicken tenderloins
1 large jar Salsa Verde
1 cup water
Taco Seasoning of your choice (I use Sazon & Sofrito)
Dump into pot, Select MANUAL high pressure for 12 minutes or use POULTRY option. Allow natural release.
1lb LEAN ground beef, season as it cooks
1 jar spaghetti sauce
1 box noodles
Brown meat on SAUTE in pot. Dump sauce, noodles (break into thirds) and 1 full jar of water into pot. Cook on MANUAL high pressure and cook for 10 minutes. Quick release when it beeps.
InstantPot Chicken & Noodles
2lb Chicken tenderloins
Poultry Seasoning, Salt, Pepper
8 Cups Chicken Broth
1lb Frozen Egg Noodles
Season chicken, add all ingredients to pot. Cook on MANUAL high pressure for 5 minutes and allow natural release.
